Pork loin with mashed pumpkin and cashew juice



For the loin

500g pork loin (cut into 125g steaks)

Salt and black pepper to taste

1 tablespoon of paprika

1 small onion, grated

2  garlic cloves

200 ml of cashew (natural) juice

For the mashed pumping

500g of cooked and mashed pumpkin

4 diced cashews

2 tablespoons of grated onion

3 tablespoons of butter

Salt and black pepper to taste

Chopped parsley to garnish


  1. Put the loin steaks in a bowl, add the cashew juice, spices and mix well.
  2. Marinate in the refrigerator for about 3 hours.
  3. Heat a little butter in a large frying pan and fry the steaks over low heat for 3 minutes on each side, Reserve.
  4. Put the butter for the mashed potatoes in a large saucepan and saute the small diced cashews , mix the onion and pumpkin already cooked and mashed. Season with salt and black pepper to taste.
  5. Cook over low heat for 5 minutes.
  6. Spread a bit of puree on the plate, top with a steak and garnish with parsley.
